Matcha Chia Pudding

       

At CAP, our love for Matcha runs deep. We’re constantly looking for new ways to incorporate Matcha into our diet, and this chia pudding is our most recent go-to.

 

Perfect for breakfast, lunch or dinner, this pudding is packed with antioxidants to nourish you on a cellular level, and has enough fiber to keep you full for hours. We recommend prepping this for breakfast the night before. Add it to your evening ritual and enjoy the process of preparing your food. It’s the ultimate act of self care.

Recipe

1 1/2 CUPS NUT MILK

1/2 TEASPOON MATCHA

1/8 TEASPOON CARDAMOM

1 TEASPOON COCONUT BUTTER

1 TABLESPOON HEMPSEEDS

1/4 CUP CHIA SEEDS

1/3 MASHED BANANA

SPLASH OF VANILLA

SALT

TOPPINGS: NUT MILK, GOJI BERRIES AND PISTACHIOS

Blend or whisk together the nut milk, matcha, cardamom, coconut butter, banana, vanilla and salt. Mix in seeds and stir until it starts to thicken. If your nut milk is very cold, the coconut butter will solidify. Blending instead of whisking will help to create a more consistent texture. Refrigerate overnight or until set. Add extra nut milk, goji berries and pistachios.
