Summer Salad: Shaved Zucchini and Corn

   

We lean into the power of plants all year round, but especially in summer. Guided by the incredible produce found at the farmer’s market this time of year, this elegant Shaved Zucchini Salad invites us to celebrate the vibrant colors and flavors of the season. Ribbons of zucchini, juicy grape tomatoes, sweet raw corn, chives, hazelnuts and green olives all get tossed with a simple dressing of olive oil and vinegar and then topped with a generous sprinkling of the Magic Spice. Pair this substantial salad alongside your other favorite summer sides, or enjoy it on its own. Summer Shaved Zucchini Salad

Serves 2-4

1-2 zucchinis 

1/4 cup corn

Handful cherry or grape tomatoes, sliced in half

1 tablespoon chives

A few tablespoons hazelnuts, toasted and chopped

1/4 cup green olives, crushed

1 tablespoon magic spice

2-3 tablespoons olive oil

1-2 tablespoons vinegar

Pink Salt to taste

 

Shave the zucchini with a mandoline and lay on a beautiful plate. Add a dash of salt and some of the magic spice along with half the amount of olive oil and vinegar. Top with tomatoes, corn, hazelnuts and green olives. Now drizzle everything with the remaining olive oil and vinegar. Finish with a generous sprinkling of chives and the rest of the magic spice. Enjoy!
