KLP Cooks: Pancakes (Aebleskivers! Waffles!)

As someone who lives with celiac, pancakes have never been high on my list of treats. When I was a kid, I always felt like the odd one out, one of the only who didn't love them, yet I was always intrigued by the endless supply of seemingly joy-inducing stacks covered in butter and syrup. But given how they made me feel, I stayed away. So when I set out to create a delicious, healthy and impeccably sourced bag to change my mind on pancakes, I knew it could only be made with Kacie of Honey Hi. Needless to say, my mind has been changed. Now I even love having them for dinner, something that seemed strange to me before, but has become something I often eat by myself or share with friends. And being that Kacie and I also have a deep love for the obscure Danish aebleskiver, we tested the mix, and it translates perfectly. If waffles are more your thing, consider them done as well. Whatever way you end up enjoying them, know that breakfast and a meal beyond (they freeze beautifully) is never far away. Now's your time to change your own mind.

Instructions:

 

The steps to make these pancakes are so simple, all you need are butter, eggs and milk. And a bag of our pancake mix. 

 

To make batter for pancakes, aebleskivers or waffles:

 

For the whole bag, whisk 1 1/2 cups milk, 2 eggs, 2 tablespoons melted butter and 2 teaspoons vanilla extract and add to dry pancake mix. You want the batter to be able to pour, but still have some substance, if more milk is needed, add till you reach desired consistency.

 

For pancakes:

 

Heat lightly oiled pan over medium heat. Pour 1/3 cup batter into warmed pan. Cook until bubbles rise to the surface, then flip. Cook second side until golden brown. Keep in the oven at low temperature until ready to serve. Add butter, maple syrup and jam.

 

For aebleskivers:

 

Pour enough batter to fill holes in pan to the edge then let cook until bubbles rise and center is set. When set, use a chopstick or fork to flip them over to the other side. Once browned, gently remove from pan and keep in warm oven until ready to serve. Split them open and add butter, jam or syrup and top with powdered sugar if you like.  

 

For waffles:

 

Add mix to waffle iron shapes. Close waffle iron and reopen when the timer goes off. Keep warm in a low oven until ready to serve. Serve with butter, maple syrup and jam.
