½ cup coconut milk
½ cup water
3 tablespoons chia seeds
¼ cup blackberries
2 teaspoons honey (or more to taste)
Juice from one passionfruit
Whisk together coconut milk, water, chia seeds and matcha. Let sit for at least 3 hours, or overnight, stirring occasionally.
While the chia is setting, cut the blackberries in half, mix with honey, and let sit.
When ready to serve, spoon the blackberry mixture over the chia and drizzle with passionfruit juice.
