Elevated Trail Mix

       

Around 4pm every afternoon (without fail!), you’ll always find CAP HQ searching for a snack. Trail mix never disappoints. Carry it in your bag, keep it in your desk or store it in bulk in your cabinet, and always have a high vibe snack on hand.

ELEVATED TRAIL MIX

SWEET

1 cup raw walnuts

1 cup raw pecans

1/2 cup raw sunflower seeds

1/2 cup raw pepitas

1/2 cup cacao nibs

1/2 cup unsweetened shredded coconut

2 tablespoons coconut oil (or ghee)

2 tablespoons anandamide (or cacao powder)

2 tablespoons coconut sugar

2 tablespoons tocos

1/2 teaspoon cinnamon

1 teaspoon sea salt

1/2 cup mulberries

 

Preheat oven to 325º. In a mixing bowl, combine the nuts, seeds, cacao nibs and shredded coconut. Set aside.

In a small saucepan over low heat, add the coconut oil, anandamide, tocos, coconut sugar, cinnamon and salt. Gently stir until all 5 ingredients are thoroughly mixed. Pour oil mixture into the nuts/seeds. Toss well to combine.

Place mixture onto a parchment lined baking sheet. Roast for 45 minutes, stirring halfway through. Allow to cool, add mulberries. You can also dehydrate this instead of baking for 12-18 hours at 115 degrees (with the mulberries included).

SAVORY

1 cup raw cashews

1 cup raw almonds

1/2 cup raw pepitas

1/2 cup raw sunflower seeds

1/4 cup sesame seeds

1 sheet nori, torn to pieces

1/4 cup dulse flakes

1 tablespoon evoo

1 tablespoon + 1 teaspoon tahini

2 tablespoons coconut aminos

1 tablespoon apple cider vinegar

1 tablespoon maple syrup

1/2 teaspoon ginger

1 teaspoon sea salt

 

Preheat oven to 325. In a mixing bowl, combine the nuts, seeds and seaweeds. Set aside.

In a smaller separate bowl, mix together the remaining ingredients. Stir well. Fold liquid mixture into the nuts/seeds. Combine thoroughly.

Place mixture onto a parchment lined baking sheet. Roast for 45 minutes, stirring halfway through. Allow to cool. You can also dehydrate this instead of baking for 12-18 hours at 115 degrees.

** Store both in an airtight container after cooled ** ** After a few days, If these trail mixes lose their "crisp," you can throw into a preheated oven at 325 for 10 minutes - or back in your dehydrator for a few hours at 115! **

 

 

BEAUTY

2 cups raw mixed nuts (pistachios are great!)

1 cup raw mixed seeds

1/2 cup unsweetened coconut flakes

1 tablespoon dried rose petals, crushed

1 lemon, zest and juice

1 tablespoon coconut oil (or ghee)

2 tablespoons raw honey

1 tablespoons ground cardamom

1 1/2 teaspoon sea salt

1 cup goji berries

 

Preheat oven to 325. In a mixing bowl, combine the nuts, seeds, rose petals and coconut flakes. Set aside.

In a small saucepan over low heat and add the coconut oil, honey, cardamom and salt. Stir until all ingredients are thoroughly mixed. Turn off heat. Pour oil mixture into the bowl with the nuts and seeds. Toss well to combine.

Place trail mix onto a parchment lined baking sheet. Roast for 45 minutes, stirring halfway through. Allow to cool, add goji berries.

Enjoy!

You can also dehydrate for 12-18 hours at 115 (with gojis included). (** For a crispier trail mix, add 2 TB of aquafaba to each recipe and omit 1 TB oil/ghee.**)
