In the spirit of summer we present to you, the Shikoku Spritz, a Japanese surf tonic to welcome the heat of summer by our resident herbalist-in-training, Alexandra Clark. When she isn't surfing or guiding our customers to their higher selves at our West Hollywood store, Alexandra is earning her Master's in Traditional Chinese Medicine. Acupuncture, moxa, nutrition and herbs are all part of the package.

Inspired by the secluded Japanese surfing island of Shikoku, this matcha spritz is cooling and energizing for even the most adventurous summer activities. Adding shiso gives this tonic an herbaceous flavor while also activating Qi! 

Shikoku Spritz

1/2 teaspoon The Matcha

6 oz sparkling water

2 shiso leaves

Juice of half a lime

1 teaspoon raw honey

In your favorite matcha bowl, using a matcha whisk, whisk matcha with enough hot water to make a paste. Add to shaker with honey, lime, ice and one torn shiso leaf. Shake vigorously and pour over ice. Add sparkling water and garnish with remaining shiso leaf and a twist of lime. Serves 1.
